recipe#1 spicy pumpkin ginger soup


Before we say adios to the cold freezy weather, here is a recipe for a ginger pumpkin soup to spice up your cold days :-)

You will need:

1 large pumpkin (or two small ones)
1 medium sweetpotato
1  medium carrot
1 onion
30g Gingerroot (50g for the ginger lovers like me)
500ml water
250mg creme fraiche
salt and pepper,chili powder
2 table spoon olive oil

Preparation:
Peel and deseed the pumpkin and chop into chunks
peel the sweetpotato and carrot and chop like the pumpkins
peel and slice the the onions and ginger into fine chops

Cooking:
 Heat and fry the onions till soft
Add the rest of the vegetables, salt, pepper and chili
Stir 5 minutes until they start to get soft
Add the water and leave
to simmer for 20 minutes under medium heat
Remove from the heater and blend with an electric blender, adding the cream bit by bit
Blend until a homogenious creamy consistancy ia reached.

Opional: If you want your soup really silky, run it through a sieve.

Serve warm with a warm bagguette or bread your choice
